One Pot Chili Cheese Pasta
- 1 tbsp olive oil
- 1 None brown onion, peeled and chopped coarsely
- 3 cloves garlic, peeled and crushed
- 1 lb ground pork
- 2 tbsp fresh thyme leaves
- 1/2 tsp dried chili flakes
- 28 oz jar tomato pasta sauce
- 1 tbsp sugar
- 16 oz penne pasta
- 10 oz Cheddar cheese, grated
- 1 tbsp coarsely chopped fresh flat-leaf parsley, to serve
- For the sauce, heat oil in a large saucepan over high heat. Cook the onion, garlic, pork, thyme and chili flakes, stirring, until the pork is browned. Stir in the sauce and sugar and simmer 2 mins. Add 3 cups hot water and uncooked pasta and cook, covered, 20 mins, stirring occasionally, until pasta is tender. Stir in 3/4 of cheese and season to taste. Sprinkle with remaining cheese and parsley to serve.
