Bolognese And Potato Gratin
- 2 tbsp olive oil
- 1 1/4 lb ground beef
- 1 None onion, diced
- 1 clove garlic, minced
- 10.5 oz carrots, peeled, diced
- 4 tbsp tomato paste
- 2 tsp dried Italian herbs
- 2 1/4 lb medium-sized potatoes, peeled, thinly sliced
- 3 tbsp butter, melted
- 2 oz Cheddar cheese, grated
- None None fresh oregano, to garnish
- Preheat oven to 400u0b0F. Heat oil in a saucepan. Brown ground beef. Season. Add onion, garlic and carrots and cook for 2 mins. Add tomato paste and herbs. Cook for 1 min. Add 2 cups water and season. Simmer for 10 mins. Transfer to a large baking dish.
- Layer potato slices over top, seasoning each layer and brushing with melted butter. Sprinkle with cheese and bake for 40 mins, until golden on top. Serve garnished with oregano.
