Thai Chicken Salad
- 3 None medium tomatoes, quartered
- 1 None small red bell pepper, thinly sliced
- 1 None fresh long red chili, thinly sliced
- 1 None fresh long green chili, thinly sliced
- 1/4 cup fresh flat-leaf parsley, chopped
- 2 tbsp fresh mint, shredded
- 2 tbsp fresh cilantro, chopped
- 1 inch fresh ginger, peeled, cut into matchsticks
- 1 lb smoked chicken breast, shredded
- 1 clove garlic, minced
- 1 tbsp sesame oil
- 1 tbsp fish sauce
- None None lime wedges, to serve
- Combine tomatoes, pepper, chilies, herbs and ginger. Add chicken. Whisk together garlic, sesame oil and fish sauce then toss with salad. Distribute between shallow serving bowls. Serve with lime wedges.
