Cajun Chicken With Guacamole And Corn Salsa
- 4 small chicken legs
- 2 tbsp olive oil
- 2 tbsp Cajun spice mix
- None None Lime wedges, to serve
- None None FOR THE GUACAMOLE
- 1 None avocado, peeled and cut into 1/4-inch cubes
- 2 tbsp freshly squeezed lemon juice
- 1 None large red chili pepper, seeded and thinly sliced
- None None FOR THE CORN SALSA
- 1 can (8 oz) corn kernels, drained and rinsed
- 4 None green onions, thinly sliced
- 2 None ripe tomatoes, diced
- 2 tbsp coarsely chopped fresh cilantro
- Preheat the oven to 350u0b0F. Brush chicken with olive oil and toss in bowl with Cajun spice mix. Make sure each portion is covered thoroughly. Adjust amount of seasoning according to taste. Place chicken on parchment paper-lined baking pan.
- Bake for 30-40 mins or until cooked through.
- Meanwhile, in 2 separate bowls mix all ingredients for corn salsa and guacamole.
- Serve chicken with salsa, guacamole, and lime wedges on the side.
