Curried Pork Meatballs With Penne
- 8.75 oz penne
- 1 tbsp vegetable oil
- 8 (3.5 oz) thick pork sausages, casings removed, shaped into 20 meatballs
- 8.75 oz butternut squash, peeled, cut into 3/4 inch pieces
- 2 None medium zucchini, cut into 3/4 inch pieces
- 1 clove garlic, minced
- 2 tsp mild curry powder
- 3/4 cup heavy cream
- 2 oz baby spinach, shredded
- Cook pasta in boiling salted water for 10-12 mins, or until al dente. Drain.
- Meanwhile, heat oil in a large frying pan over medium-high heat. Cook meatballs for 5 mins. Add squash, zucchini and garlic. Cook for 3-4 mins, or until vegetables are golden. Add curry powder and cook for 1 min. Add heavy cream. Bring to a boil, reduce heat and simmer for 5 mins, or until thickened slightly.
- Add pasta and spinach and toss until spinach wilts.
