Curried Pork Meatballs With Penne

  1. Cook pasta in boiling salted water for 10-12 mins, or until al dente. Drain.
  2. Meanwhile, heat oil in a large frying pan over medium-high heat. Cook meatballs for 5 mins. Add squash, zucchini and garlic. Cook for 3-4 mins, or until vegetables are golden. Add curry powder and cook for 1 min. Add heavy cream. Bring to a boil, reduce heat and simmer for 5 mins, or until thickened slightly.
  3. Add pasta and spinach and toss until spinach wilts.
