Drop Scones
- 1 1/2 cups self-rising flour
- 1 tsp mixed spice, such as pumpkin pie spice
- 1/2 tsp ground nutmeg
- 1/4 tsp baking soda
- 1/3 cup sugar
- 1 1/4 cups milk
- 1 None egg
- 1 tbsp honey, plus additional, to serve
- None None Whipped cream and raspberries, to serve
- Sift flour, mixed spice, nutmeg and baking soda into a large bowl. Stir in sugar. Make a well in the center.
- Whisk milk, egg and honey in a medium bowl. Gradually stir into flour mixture until well combined.
- Heat a large skillet on medium heat. Spray with no stick cooking spray. Drop tablespoons of mixture into pan; cook, in 5 batches, for 1-2 mins each, until bubbles form on the surface and begin to break and the underside is golden.
- Turn and cook the other side for 1 min. Cover in a clean tea towel to keep warm while cooking the remaining batter.
- Drizzle with honey, top with a dollop of cream and sprinkle with raspberries to serve.
