Drop Scones

  1. Sift flour, mixed spice, nutmeg and baking soda into a large bowl. Stir in sugar. Make a well in the center.
  2. Whisk milk, egg and honey in a medium bowl. Gradually stir into flour mixture until well combined.
  3. Heat a large skillet on medium heat. Spray with no stick cooking spray. Drop tablespoons of mixture into pan; cook, in 5 batches, for 1-2 mins each, until bubbles form on the surface and begin to break and the underside is golden.
  4. Turn and cook the other side for 1 min. Cover in a clean tea towel to keep warm while cooking the remaining batter.
  5. Drizzle with honey, top with a dollop of cream and sprinkle with raspberries to serve.
