Angel Hair Pasta With Fresh Tomato, Basil And Pepperoni
- 12 oz angel hair pasta
- 2 tbsp vegetable or extra virgin olive oil
- 6 oz pepperoni slices, halved
- 1 lb ripe tomatoes, finely chopped
- 1/3 cup pitted black olives, quartered
- 1/3 cup thinly sliced basil, plus additional leaves, to serve
- 1/4 cup grated Parmesan cheese
- Cook pasta in a saucepan of boiling salted water according to package directions. Drain, reserving 1/2 cup of the cooking liquid. Return pasta and cooking liquid to pan.
- Meanwhile, heat 1 tbsp of the oil in a medium skillet on medium-high heat. Add pepperoni; cook, stirring, for 4 mins. Add pepperoni, tomatoes, olives and basil to pasta; toss to combine. Season with pepper.
- Serve pasta drizzled with remaining 1 tbsp oil. Sprinkle with Parmesan cheese and additional basil.
