Lemon Mint Couscous

  1. Cook couscous according to package directions, substituting chicken broth for water. Let cool.
  2. Meanwhile, whisk together 1/4 cup orange juice, 1 tsp orange zest, 2 tbsp lemon juice, 1 tsp lemon zest, olive oil, Parmesan cheese and herbs. Add tomatoes, cucumber, scallions and cooled couscous. Toss gently to coat. Season. Stir in almonds.
