Lemon Mint Couscous
- 12 oz pearl couscous
- 2 cups chicken broth
- 1 None orange, zested and juiced
- 1 None lemon, zested and juiced
- 2 tbsp olive oil
- 2 tbsp Parmesan cheese
- 2 tbsp fresh parsley leaves, chopped
- 1 tbsp fresh basil leaves, chopped
- 1 tbsp fresh mint leaves, chopped
- 1 1/2 cups cherry tomatoes, halved
- 1 cup chopped seedless cucumber
- 1/4 cup chopped scallion
- 1/4 cup toasted almonds
- Cook couscous according to package directions, substituting chicken broth for water. Let cool.
- Meanwhile, whisk together 1/4 cup orange juice, 1 tsp orange zest, 2 tbsp lemon juice, 1 tsp lemon zest, olive oil, Parmesan cheese and herbs. Add tomatoes, cucumber, scallions and cooled couscous. Toss gently to coat. Season. Stir in almonds.
