Honey And Ginger Chicken

  1. Bring sugar, honey and 1/4 cup water to a boil. Add ginger. Simmer, stirring, for 5 mins, or until ginger is tender. Transfer to a large, heatproof bowl. Stir in lemon rind, garlic and chili (if using). Add chicken. Remove from heat, cover and let cool. Chill for 3 hours or overnight, turning occasionally.
  2. Preheat oven to 350u0b0F. Place chicken mixture in a roasting pan. Roast for 40 mins, or until chicken is browned and cooked through.
  3. Sprinkle with spring onions and serve with steamed rice.
