Enchilada Casserole
- 1 lb. hamburger
- 1 medium onion, chopped
- 1 clove garlic, minced
- 1 can Mexicorn
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/4 to 1/2 tsp. chili powder
- 1/2 tsp. oregano
- 1/2 tsp. cumin
- 1 can tomato sauce
- 1 can enchilada sauce
- 8 corn tortillas
- 8 slices American cheese
- Saute onion and garlic in 2 tablespoons oil.
- Brown meat; mix seasonings with tomato sauce and add 1/2 can enchilada sauce. (Pour remaining enchilada sauce over casserole.)
- Pour 1/2 mix into casserole dish.
- Top with 4 tortillas and 4 slices of cheese. Repeat.
- Bake at 350u0b0 for 25 to 30 minutes.
- Be sure to pour rest of enchilada sauce over casserole.
- Serves 5 or 6.
