Chewy Coconut Brownies

  1. Preheat oven to 350u0b0F. Grease and line a 7x12 inch brownie pan with parchment paper, extending paper 3/4 inch over long sides.
  2. Combine butter, sugar, egg and vanilla. Sift flour and cocoa powder together then stir into mixture. Fold in 1/2 cup coconut. Transfer to prepared pan and bake for 25 mins, or until firm.
  3. Meanwhile, to make the chocolate icing, sift powdered sugar and cocoa powder into a small bowl. Add butter and 1 tbsp hot water. Stir until smooth.
  4. Spread icing over hot brownies and sprinkle with remaining shredded coconut. Let cool then cut into squares or triangles. Serve.
