Pear And Rhubarb Crumble
- None None Filling
- 4 None pears, peeled, cored, cut into chunks
- 1/2 bunch rhubarb, leaves removed, trimmed, washed, cut into 1 inch pieces
- 1/3 cup sugar
- None None Crumble
- 1/2 cup all-purpose flour
- 1/3 cup cold butter, chopped
- 1/3 cup brown sugar
- 1 cup rolled oats
- 1/2 tsp ground cinnamon
- None None Cream or ice cream, to serve
- Preheat oven to 350u0b0F. Grease four 1 cup ramekins or a medium baking dish.
- Combine pears and 1/4 cup water in medium saucepan. Bring to boil. Simmer, covered, for 4-5 minutes until almost tender.
- Add rhubarb and sugar. Simmer, stirring, for 2-3 minutes until rhubarb is just tender. Drain excess liquid. Spoon mixture evenly into prepared ramekins.
- Meanwhile to make crumble, sift flour into medium bowl. Rub in butter using fingertips until mixture resembles breadcrumbs. Stir in brown sugar, oats and cinnamon. Sprinkle evenly over fruit in ramekins.
- Bake for 15-20 minutes until golden. Serve crumbles warm with cream or ice cream.
