Chocolate Orange Mud Cakes
- 1 3/4 cups butter, chopped
- 14 oz dark chocolate, chopped
- 2/3 cup berry or apricot jam
- 2 tsp instant coffee granules
- 1 tsp vanilla bean paste
- 1 None orange, zested
- 3 tsp orange juice
- 5 None eggs
- 2 cups sugar
- 1/2 cup self-rising flour, sifted
- 3 tbsp cocoa, sifted, plus extra for dusting

- 1 cup heavy cream
- 10.5 oz dark chocolate, chopped
- None None Whipped cream or ice cream, to serve
- Preheat oven to 325u0b0F. Grease and flour two 9 inch round cake pans.
- Place butter, chocolate, jam, coffee, vanilla bean paste, zest and juice in saucepan and warm over low heat, stirring until melted. Set aside to cool to room temperature.
- Whisk eggs and sugar together until pale and thick. Add cooled chocolate mixture and beat until combined. Fold in sifted flour and cocoa.
- Pour batter into pans and bake for 60 mins or until a skewer inserted in center comes out clean. Cool cakes on wire rack and dust with cocoa powder.
- Meanwhile, to make ganache, heat cream in a saucepan until it just reaches the boiling point, then pour cream over chopped chocolate in a mixing bowl. Leave to stand for 2 mins, then stir until combined and smooth. Pour ganache over cakes and allow to drip down the sides.
- Serve cakes with whipped cream or ice cream.
