Cinnamon, Apple And Raisin Pudding
- 15 tbsp softened butter
- 1/2 cup granulated sugar, plus 2 tbsp extra
- 3 None green apples, peeled, cored, sliced
- 2/3 cup chopped walnuts
- 1 tsp vanilla extract
- 2 None eggs
- 2 1/4 cups self-rising flour, sifted
- 1 tsp ground cinnamon
- 1/3 cup raisins, chopped
- 1/2 cup milk
- None None heavy cream, to serve
- Preheat oven to 350u0b0F. Lightly grease 6 - 12 oz ramekins and line bases with parchment paper. Arrange in a large baking dish.
- Melt 4 tbsp butter in a medium frying pan over high heat. Add 1/2 cup sugar and stir until dissolved. Add apples and saute for 3-4 mins, until apples are just tender. Add nuts. Distribute 1/2 of the apple mixture between prepared ramekins.
- Cream remaining butter and sugar with vanilla until pale and creamy. Add eggs, 1 at a time, beating well after each addition. Sift flour and cinnamon together then lightly fold into creamed mixture along with raisins and milk. Distribute between ramekins. Pour enough hot water in baking dish to come halfway up sides of ramekins. Cover with parchment paper and foil. Bake for 35-40 mins, until a skewer inserted in the center comes out clean.
- Let cool before inverting onto serving plates. Serve warm with heavy cream.
