Seafood Pie
- 1 lb firm white fish, cut into chunks
- 1 lb salmon or sea trout, cut into chunks
- 7 oz scallops or peeled shrimp
- 1 None bay leaf
- 1 None onion, peeled, sliced
- 3 1/2 tbsp butter
- 1/3 cup flour
- 1 cup milk
- 6 None green onions, finely sliced
- 1 tbsp fresh dill, chopped
- 8 sheets filo dough
- None None mixed greens, to serve (optional)
- Preheat oven to 350u0b0F. Lightly grease a pie dish.
- Bring 1 cup water to a simmer in a large frying pan over low heat. Add seafood, bay leaf and onion. Poach for 5 mins, covered, until just opaque. Remove seafood and strain liquid, reserving 1/2 cup.
- Melt butter in a heavy-bottomed saucepan over medium heat. Add flour and cook for 2-3 mins, until light brown and nutty. Gradually whisk in milk and reserved poaching liquid, stirring continuously. Simmer for 2 mins, until thickened. Add seafood, green onions and dill. Season. Transfer to prepared pie dish.
- Layer filo dough, lightly coating each sheet with oil. Cut into a disc 1/3 inch larger than pie dish. Place over pie dish and coat top with oil. Bake for 35 mins, until golden brown.
- Serve with mixed greens, if desired.
