Mediterranean Lamb Burgers
- 8 oz ground lamb
- 1 None egg white
- 1/2 cup stale whole wheat breadcrumbs
- 2 tsp chopped fresh rosemary
- 2 tsp chopped fresh mint leaves
- 1 tsp finely grated lemon peel
- 1/2 clove garlic, halved
- 2 tsp tomato paste
- 1 cup mixed salad leaves
- 1 None tomato, thinly sliced
- 1/2 None red onion, thinly sliced
- 2 None whole wheat bread rolls, split
- None None FOR THE YOGURT SAUCE
- 1/3 cup low fat plain yogurt
- 1/2 clove garlic, crushed
- 1 tbsp finely chopped fresh mint leaves
- 1/2 None mini cucumber, seeded and finely chopped
- Process lamb, egg white, breadcrumbs, herbs, lemon peel, garlic and tomato paste until combined. Using wet hands, shape mixture into two patties.
- Lightly spray a heated large nonstick skillet with no stick cooking spray. Cook patties, on medium heat, until browned both sides and cooked through.
- For the yogurt sauce, combine all ingredients in small bowl.
- Sandwich salad leaves, tomato, patties, onion and yogurt sauce between rolls.
