Pineapple And Prawn Noodles With Chili Lime Dressing
- 8.75 oz rice noodles, soaked in boiling water for 5-8 mins then drained
- 1 lb cooked prawns, peeled and deveined
- 1/2 None fresh pineapple, peeled, cored and chopped
- 4 oz cherry tomatoes, halved
- 2 tbsp fresh cilantro leaves, roughly chopped + extra, to garnish
- 3 None spring onions, trimmed and sliced
- 1/4 cup lime juice
- 2 tbsp sweet chili sauce
- 1 tbsp sesame oil
- 2 tsp fish sauce
- 2 tsp brown sugar
- 2 cloves garlic, peeled and minced
- 1 None red chili, deseeded and sliced
- 1 tsp fresh ginger, finely grated
- Combine noodles, prawns, pineapple, tomatoes, cilantro and spring onions.
- Whisk together remaining ingredients then toss with noodle mixture and garnish with extra cilantro leaves.
