Shrimp Pizzas With Salsa Verde
- 2 None pizza bases
- 4 None large tomatoes, thinly sliced
- 1 None small red onion, sliced into rings
- 10.5 oz mozzarella cheese, sliced thinly into rounds
- 10.5 oz raw shrimp, peeled, deveined, tails intact
- None None Salsa Verde
- 1 bunch fresh tarragon, leaves picked, plus extra to serve
- 1/2 cup fresh dill, leaves picked
- 1 bunch fresh chives
- 2 tbsp whole-grain mustard
- 1 tbsp capers, rinsed, drained
- 2 tbsp white balsamic vinegar
- 1/4 cup extra virgin olive oil
- Preheat oven to 425u0b0F. Place pizza bases on 2 baking trays lined with parchment paper.
- Arrange tomatoes, onion, mozzarella and shrimp on pizza bases. Season. Bake for 10-12 mins, until shrimp are cooked and cheese is melted.
- Meanwhile, to make the salsa verde, combine herbs, mustard, capers, vinegar and 2 tbsp water in a food processor. Process until smooth. With the motor running, slowly add oil. Season.
- Drizzle salsa verde generously over pizzas. Sprinkle extra tarragon over top and cut into wedges to serve.
