Halloumi And Broccoli Salad

  1. Blanch broccoli in boiling salted water for 3 mins. Shock in ice water until cool then drain.
  2. Combine butter, olive oil and garlic in a frying pan over medium heat. Add breadcrumbs and cook for 15 mins, stirring regularly, until golden brown. Drain on paper towels.
  3. Heat a large grill pan over medium-high heat. Cook halloumi for 3 mins per side, or until golden brown.
  4. Arrange broccoli and halloumi on a serving platter. Drizzle with lemon juice and extra-virgin olive oil. Season. Sprinkle with garlic breadcrumbs.
