Halloumi And Broccoli Salad
- 2 1/4 lb Chinese broccoli
- 2 tbsp butter
- 1 tbsp olive oil
- 1 clove garlic, minced
- 1/2 cup fresh breadcrumbs
- 1 1/2 lb halloumi, sliced into 1/3 inch-thick pieces
- 1 None lemon, juiced
- 2 tsp extra-virgin olive oil
- Blanch broccoli in boiling salted water for 3 mins. Shock in ice water until cool then drain.
- Combine butter, olive oil and garlic in a frying pan over medium heat. Add breadcrumbs and cook for 15 mins, stirring regularly, until golden brown. Drain on paper towels.
- Heat a large grill pan over medium-high heat. Cook halloumi for 3 mins per side, or until golden brown.
- Arrange broccoli and halloumi on a serving platter. Drizzle with lemon juice and extra-virgin olive oil. Season. Sprinkle with garlic breadcrumbs.
