Blue Cheese Burgers With Fruit Chutney
- 1 lb ground beef
- 3 tbsp fresh parsley leaves, chopped
- 2 tbsp mayonnaise, plus extra to serve
- 2 tbsp pickle relish
- 1 tbsp Dijon mustard, plus extra to serve
- 1 tbsp capers, drained, finely chopped
- 3 None anchovies, drained, finely chopped
- 1 None shallot, peeled, finely chopped
- 2 tbsp olive oil
- 4 None sesame seed buns, toasted
- 2 oz watercress
- 6 oz blue cheese, sliced
- None None fruit chutney, to serve
- Combine beef, parsley, mayonnaise, pickle relish, mustard, capers, anchovies and shallot. Season. Shape into 4 burger patties, cover and chill until required.
- Heat oil in a large nonstick frying pan over high heat. Cook patties for 2-3 mins per side, until cooked through. Drain on paper towels.
- Spread extra mustard and mayonnaise over toasted buns. Sandwich burgers between buns along with watercress, blue cheese and chutney.
