Gayle Ann'S Almond Burgers
- 2 c. cooked brown rice
- 1 c. almond meal (ground almonds)
- 2 to 4 Tbsp. soy sauce or a mixture of water and soy sauce
- 1 egg
- 1/2 onion, chopped
- 1 (2 x 2-inch) piece cheese, cut in chunks
- 1/4 c. parsley (optional)
- oil
- Combine rice and almond meal.
- In a blender, mix soy sauce, egg, onion and cheese.
- Pour this over rice and almond meal.
- Mix thoroughly with the fingers until an even consistency is reached. If desired, add 1/4 cup minced parsley.
- Mix, then shape the mixture into burgers and fry them in a tiny bit of oil, preferably on a griddle.
- They cook fairly rapidly and brown nicely.
- Cook over medium heat until browned, about 5 minutes on each side. Serve on whole wheat buns with lettuce, tomato, sprouts and raw sweet onion rings.
- Makes 6 burgers.
