Prawns With Baked White Asparagus
- 4 tbsp olive oil
- 1 None large onion, peeled and diced
- 2 cloves garlic, peeled and minced
- 1 None red bell pepper, finely chopped
- 1 (28 oz) can whole tomatoes
- 1-2 tsp sugar
- 2 1/4 lb white asparagus, peeled and woody ends removed
- 1 bunch fresh parsley, finely chopped + some leaves reserved for garnish
- 1/3 lb feta cheese
- 1 lb prawns, peeled
- Heat 2 tbsp oil in a large pan, add onion, garlic and pepper and saute for 2-3 mins. Add tomatoes, breaking them up with the back of a wooden spoon. Season, adding sugar to taste, then simmer for 20 mins.
- Meanwhile, cook asparagus in boiling salted water with 1 tsp sugar for about 12 mins. Drain, rinse under cold water then drain again. Transfer to an ovenproof dish. Preheat oven to 400u0b0F. Mix parsley with tomato sauce, adjust seasoning then pour over asparagus. Crumble feta on top and bake for 12-15 mins.
- To prepare the prawns, heat 2 tbsp oil in a frying pan, add prawns and saute for about 2 mins, turning. Season. Remove asparagus from oven and top with sauteed prawns. Garnish with reserved parsley and serve immediately.
