Chili And Mandarin Chicken
- 1 tbsp olive oil
- 1 tbsp chili powder
- 5 None mandarin oranges, 2 zested and juiced, 3 peeled and segmented
- 8 None chicken drumsticks
- 1/2 cup granulated sugar
- 1 tbsp soy sauce
- None None steamed Asian greens, to serve
- Preheat oven to 400u0b0F. Line a roasting pan with parchment paper.
- In a small bowl, combine oil, chili powder and orange zest. Rub over chicken and season to taste. Arrange in a single layer in prepared pan. Roast for 30-35 mins, until skin is crispy and chicken is cooked through.
- Meanwhile, combine sugar, 1/2 the orange juice and 1/3 cup water in a medium saucepan. Stir over low heat until sugar has dissolved. Increase heat to high and boil for 4-5 mins, until thickened and a light caramel color. Remove from heat and stir in remaining orange juice and soy sauce. Stir in orange segments.
- Spoon sauce over chicken. Serve with Asian greens.
