Swedish Vetebröd Cardamom Coffee Cake
- 2 1/4 tsp active dry yeast
- 1 1/2 cups lukewarm milk
- 4 1/3 cups all-purpose flour
- 5 None cardamom pods, finely ground with a mortar and pestle
- 1 tbsp sugar
- 6 tbsp olive oil
- 1 None egg yolk, beaten with 3 tbsp water
- 2-3 tbsp lemon juice
- 1 cup powdered
- Dissolve the yeast in the milk and place in a bowl with the flour, cardamom, sugar, oil and a pinch of salt. Knead dough until smooth, then cover and allow to rest in a warm place for 45 mins, until it has doubled in size.
- On a floured work surface, roll out the dough to a 13 x 10 inch rectangle. From one long side, cut the dough into 9 strands, leaving it joined at the top. Plait into 3 braids, then plait the 3 braids into 1 thick braid and pinch the ends together. Cover and allow to rest for 20 mins.
- Preheat the oven to 325u0b0F. Brush the egg mixture over the bread and bake for 20-25 mins, until a skewer comes out clean. Allow to cool on a wire rack.
- In a bowl, mix the lemon juice and powdered sugar to a smooth, thick icing. Spread over the bread and allow to dry.
