Sausage And Basil Macaroni
- 1 pkg (16 oz) macaroni
- 2 tbsp vegetable or olive oil
- 1 1/3 lbs pork sausages
- 1 medium onion, finely chopped
- 3 cloves garlic, thinly sliced
- 1 can (28 oz) diced tomatoes
- 1 cup basil leaves
- 1 cup frozen peas
- 1/2 cup freshly grated Parmesan cheese
- Cook pasta in a large saucepan of boiling salted water according to package directions. Drain.
- Meanwhile, heat oil in a large deep skillet on high heat. Add sausages; cook and turn for 5-8 mins or until browned and cooked through. Remove from skillet. Add onion, garlic, tomatoes, 3/4 cup of the basil leaves and peas to pan. Reduce heat to medium; cook, stirring occasionally, for 5 mins or until slightly reduced.
- Slice sausages and add to tomato mixture in pan. Add macaroni; stir to combine. Season. Serve sprinkled with Parmesan cheese and remaining 1/4 cup basil leaves.
