Chocolate Mousse Cake
- 7 oz dark chocolate, 6 oz broken into pieces, 1 oz shaved
- 6 None eggs, separated
- 3/4 cup sugar
- 35 None Ladyfinger cookies
- 1/2 cup heavy cream, whipped
- Melt the broken chocolate in a heatproof bowl set over a pan of simmering water. Beat the egg yolks and half the sugar in a heatproof bowl set over a pan of barely simmering water until bright yellow and creamy. Remove from the heat and gradually stir in the melted chocolate.
- Beat the egg whites until they from stiff peaks, gradually add the remaining sugar and a pinch of salt. Gently fold into the chocolate mixture and chill for 1 hour.
- Line an 8 inch diameter cake pan with aluminum foil. Line the bottom and sides with the ladyfingers. Spoon in the chocolate mousse and smooth out. Chill for at least 3 hours.
- Turn out on to a plate and remove the foil. Spread the whipped cream over the top and top with the chocolate shavings.
