Caramel Date Tart

  1. Preheat oven to 425u0b0F. Line base and sides of an 8 inch springform cake pan with pie dough. Place on a baking tray. Line with parchment paper, fill with pie weights and bake for 10 mins. Remove weights and paper and bake for 5 mins.
  2. Meanwhile, cook sugar over low heat for 2 mins, or until sugar dissolves. Increase heat and cook, without stirring, for 2 mins, or until beginning to caramelize. Remove from heat and add cream and butter. Place over medium heat and cook for 8 mins, or until sauce thickens slightly.
  3. Arrange dates in cooled pie shell. Pour caramel over top then freeze for 3 hours, or until firm.
  4. Dust tart with powdered sugar. Serve with extra heavy cream.
