Caramel Date Tart
- 1/2 sheet frozen pie dough, thawed
- 1 cup granulated sugar
- 2 1/2 cups heavy cream + extra, to serve
- 3/4 cup butter, chopped
- 1/2 cup fresh dates, pitted, halved
- None None powdered sugar, to dust
- Preheat oven to 425u0b0F. Line base and sides of an 8 inch springform cake pan with pie dough. Place on a baking tray. Line with parchment paper, fill with pie weights and bake for 10 mins. Remove weights and paper and bake for 5 mins.
- Meanwhile, cook sugar over low heat for 2 mins, or until sugar dissolves. Increase heat and cook, without stirring, for 2 mins, or until beginning to caramelize. Remove from heat and add cream and butter. Place over medium heat and cook for 8 mins, or until sauce thickens slightly.
- Arrange dates in cooled pie shell. Pour caramel over top then freeze for 3 hours, or until firm.
- Dust tart with powdered sugar. Serve with extra heavy cream.
