Snowball Skewers
- 1 cup medium-grain white rice
- 9 oz ground pork or chicken
- 1 None green onion, finely chopped
- 2 tsp grated fresh ginger
- 1 clove garlic, crushed
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 12 small mint leaves
- 6 None cherry tomatoes, cut in half
- Soak rice in cold water for 30 mins. Line a baking pan with paper towels. Drain rice and spread on prepared pan.
- Place ground pork, onion, ginger, garlic, soy sauce and sesame oil in a large bowl. Using damp hands, mix until well combined. Roll mixture into 12 balls. Roll each ball in rice to coat.
- Place balls, in single layer, in a bamboo steamer basket. Cover with a tight-fitting lid. Place over a pan of simmering water. Steam for 10-12 mins, until rice is tender and pork cooked through. Cool slightly.
- Thread one ball, mint leaf and a tomato half onto a skewer. Repeat to make 12 skewers in total.
