Snowball Skewers

  1. Soak rice in cold water for 30 mins. Line a baking pan with paper towels. Drain rice and spread on prepared pan.
  2. Place ground pork, onion, ginger, garlic, soy sauce and sesame oil in a large bowl. Using damp hands, mix until well combined. Roll mixture into 12 balls. Roll each ball in rice to coat.
  3. Place balls, in single layer, in a bamboo steamer basket. Cover with a tight-fitting lid. Place over a pan of simmering water. Steam for 10-12 mins, until rice is tender and pork cooked through. Cool slightly.
  4. Thread one ball, mint leaf and a tomato half onto a skewer. Repeat to make 12 skewers in total.
