Arugula Wrapped Salmon In Filo Dough

  1. Preheat oven to 425u0b0F.
  2. Place salmon fillets in a roasting pan. Sprinkle with lemon zest and juice. Season. Bake for 8-12 mins, until almost cooked through. Let cool. Drain on paper towels, if necessary.
  3. Reduce heat to 375u0b0F. Layer 3 sheets of filo dough together. Add arugula, 1 salmon fillet and some more arugula. Fold pastry over and tuck edges underneath. Repeat with remaining filo dough. Transfer to a lightly-greased baking tray. Brush with melted butter and bake for 15-20 mins, until golden brown.
  4. Serve immediately with warmed hollandaise sauce and mixed vegetables.
