Arugula Wrapped Salmon In Filo Dough
- 4 (6oz) salmon fillets, skin removed
- 1 None lemon, zested and juiced
- 8 oz filo dough, cut into 7x12 inch rectangles
- 3.5 oz baby arugula
- 3 tbsp butter, melted
- 1 cup hollandaise sauce, warmed, to serve
- None None mixed vegetables, to serve
- Preheat oven to 425u0b0F.
- Place salmon fillets in a roasting pan. Sprinkle with lemon zest and juice. Season. Bake for 8-12 mins, until almost cooked through. Let cool. Drain on paper towels, if necessary.
- Reduce heat to 375u0b0F. Layer 3 sheets of filo dough together. Add arugula, 1 salmon fillet and some more arugula. Fold pastry over and tuck edges underneath. Repeat with remaining filo dough. Transfer to a lightly-greased baking tray. Brush with melted butter and bake for 15-20 mins, until golden brown.
- Serve immediately with warmed hollandaise sauce and mixed vegetables.
