Banana Bread Pudding
- 6 thick slices day-old bread
- 3 tbsp butter, softened
- 2 None ripe bananas, cut into 2 inch angled slices
- 1 cup frozen blueberries
- 1 x 14 oz can sweetened condensed milk
- 1/2 cup milk
- 2 None large eggs, lightly beaten
- 2 tsp cinnamon sugar
- 1/2 cup cream, heated
- None None Ice cream, to serve
- Preheat oven to 350u0b0F.
- Spread both sides of bread with butter. Cut in half. Arrange in a 6 cup baking dish, alternating with banana slices, slightly overlapping the pieces. Sprinkle with berries.
- In a large bowl, combine half condensed milk, all the milk and eggs and whisk well. Pour over bread and set aside 10 minutes. Sprinkle with cinnamon sugar.
- Bake pudding 45-50 minutes, until top is golden and custard mixture just set.
- Meanwhile, to make caramel sauce, place remaining condensed milk in a saucepan. Stir over a medium heat 5-6 minutes, until thick and golden. Mix in cream, stirring until smooth. Bring to a boil.
- Cool pudding 5-10 minutes. Serve with ice cream and caramel sauce.
