Pear Pie With Chocolate Custard

  1. Preheat oven to 400u0b0F. Lightly grease a baking tray.
  2. Combine ground hazelnuts and butter then spread over puff pastry, leaving a 1 inch border.
  3. Combine pears, raisins and sugar then arrange over hazelnut layer.
  4. Fold puff pastry border upwards and pleat over filling. Bake for 15-20 mins, until golden brown.
  5. Meanwhile, to make the chocolate custard, in a medium bowl, whisk together egg yolks, sugar and cornstarch. Bring milk and cream to a boil then remove from heat. Gradually whisk into yolk mixture then return to saucepan. Stir over low heat until mixture thickens and coats the back of a spoon (about 10 mins). Do not boil.
  6. Stir in chocolate and Kahlua, if using, until chocolate melts. Remove from heat. Dust pie with powdered sugar and serve with chocolate custard.
