Lamb Pilaf

  1. Heat oil in a large, heavy-bottomed saucepan on medium heat. Cook onion and garlic 4-5 mins, stirring often, until golden.
  2. Increase heat to high. Brown ground lamb 4-5 mins, breaking up lumps. Stir in honey and spices; cook 1 min.
  3. Add stock, rice and raisins. Bring to a boil. Reduce heat to low; cook, covered, 10-12 mins, until liquid is almost absorbed.
  4. Stir in carrots. Cover and let stand for 5 mins. Serve topped with tomato, yogurt and cilantro.
