Lamb Pilaf
- 1 tbsp olive oil
- 1 None onion, sliced
- 2 cloves garlic, crushed
- 9 oz ground lamb
- 2 tsp honey
- 1 tsp ground cinnamon
- 1 tsp ground cumin
- 1 1/2 cups chicken stock
- 1 cup basmati rice
- 1/4 cup raisins
- 2 None carrots, grated
- 1 None tomato, chopped
- None None Plain yogurt, cilantro leaves, to serve
- Heat oil in a large, heavy-bottomed saucepan on medium heat. Cook onion and garlic 4-5 mins, stirring often, until golden.
- Increase heat to high. Brown ground lamb 4-5 mins, breaking up lumps. Stir in honey and spices; cook 1 min.
- Add stock, rice and raisins. Bring to a boil. Reduce heat to low; cook, covered, 10-12 mins, until liquid is almost absorbed.
- Stir in carrots. Cover and let stand for 5 mins. Serve topped with tomato, yogurt and cilantro.
