Sweet Potato And Tuna Patties With Tomato Salad
- 1 lb sweet potato, peeled, chopped
- 8 oz canned baked beans in tomato sauce
- 6 None spring onions, thinly sliced
- 12 oz tuna in oil, drained and flaked
- 5 oz dried multi-grain breadcrumbs
- 1/3 cup flour
- 1/4 cup vegetable or olive oil
- 10 oz cherry tomatoes, halved
- 1 None mini cucumber, chopped
- 2 tbsp honey mustard salad dressing
- For the patties, place the sweet potato on a microwave-safe plate. Microwave on high 5 mins or until just tender. Transfer to a heatproof bowl. Using a fork, mash until smooth. Cool. Add baked beans, half of the onion, the tuna and breadcrumbs and stir to combine. Shape into 12 patties. Coat in flour, shaking off excess. Transfer to a baking sheet lined with parchment paper. Heat the oil in a frying pan on medium-high heat. Cook the patties, in 3 batches, 5 mins or until golden.
- Meanwhile, for the tomato salad, combine the remaining onion, tomato, cucumber and dressing in a bowl. Serve with patties.
