Pesto Fish Wraps
- 10.5 oz fresh firm white fish fillets, skin removed, cut into thick strips
- 2 tbsp store-bought pesto
- 2 tsp olive oil
- 4 None flour tortillas
- 1 head baby romaine lettuce, leaves separated
- 1 None medium ripe tomato, cut into thin wedges
- 1 None medium ripe avocado, thinly sliced
- 2 tbsp mayonnaise
- None None shoestring fries, to serve
- None None lemon or lime wedges, to serve
- Preheat oven to 350u0b0F. Combine fish and pesto. Heat oil in a frying pan over medium heat. Cook fish, in batches, for 1-2 mins per side, or until cooked. Set aside.
- Meanwhile, wrap tortillas in foil and bake for 8 mins, or until hot.
- Arrange lettuce, fish, tomato and avocado on tortillas. Top with mayonnaise. Roll up to enclose filling. Serve with fries and citrus wedges.
