Strawberry And Peach Bread Pudding
- 4 oz dried strawberries
- 4 oz dried peaches, cut into quarters
- 1/3 cup brandy
- 2/3 lb brioche bread, cut into chunks
- 4 None large eggs, lightly beaten
- 1/4 cup sugar
- 2 cup low-fat milk
- 1 cup light cream
- 1 None vanilla bean, split lengthwise, seeds scraped
- None None powdered sugar, for dusting
- Preheat oven to 375u0b0F. Grease an 8-cup baking dish with butter. Soak dried fruit in brandy for 10 mins. Place half of brioche in base of prepared dish. Top with 2/3 of fruit. Top with remaining brioche and fruit.
- Whisk together egg and sugar. Place milk and cream in a pan on low. Stir in vanilla. Heat until almost simmering. Whisk into egg mixture. Strain over brioche and let stand 10-15 mins. Place baking dish in a larger baking pan. Fill baking pan halfway with hot water and bake 45 mins, until a knife inserted comes out clean. Dust with powdered sugar to serve.
