Caramelized Pork Chops With Peas
- 4 None pork chops
- 2 1/2 tbsp sunflower oil
- 2 tbsp honey
- 2 tbsp white wine vinegar
- 1 tbsp soy sauce
- 3 tbsp thyme leaves
- 2 tbsp butter
- 1 None onion, finely diced
- 1 lb frozen peas
- 2 oz diced ham
- 1 pinch grated nutmeg
- Season the pork chops with salt and pepper. Heat 2 tbsp oil in a large frying pan, add the chops, and cook for 3-4 mins, turning. Drizzle over the honey and let caramelize for 2 mins. Pour in the vinegar and soy sauce then cover and simmer for 1-2 mins. Remove from the heat and sprinkle over the thyme. Cover and set aside.
- Heat 1 tbsp butter in a separate frying pan, add the onion, and saute for 2 mins. Add the peas and enough water to just cover the vegetables. Season with salt and pepper, then cover and simmer for 3-4 mins.
- Heat 1/2 tbsp oil in a saucepan, add the ham and fry for 3-4 mins. Drain any excess liquid from the peas then fold in the ham, 1 tbsp butter, and the nutmeg.
- Divide the chops and peas between 4 plates then serve.
