Fiesta Burritos
- 10 (8-inch) flour tortillas
- 1 pkg. taco seasoning
- 1 1/2 c. tomato juice (I use 8 oz. tomato sauce and water to make 1 1/2 c.)
- 1 Tbsp. oil
- 1/2 lb. ground beef
- 1 can refried beans
- 2 c. shredded Cheddar cheese, divided
- 1 1/2 c. shredded lettuce (optional)
- Combine taco mix, tomato juice and oil.
- Mix well and set aside.
- Cook beef until brown; drain.
- Stir in beans and 1/2 cup tomato juice mix.
- Bring to boil; cover and simmer 5 minutes, stirring occasionally.
- Remove from heat.
- Place 1/4 cup beef mixture and 2 1/2 tablespoons cheese on center of each tortilla. Roll up and place seam side down in lightly greased 13 x 9-inch pan.
- Pour extra juice over tortillas.
- Cover (with foil) and bake at 350u0b0 for 15 minutes.
- Uncover.
- Sprinkle with remaining cheese and bake 5 minutes more.
- Sprinkle with lettuce, if desired.
- We serve with sour cream.
