Chocolate Berry Shortcake Stack
- 10 tbsp (1 1/4 sticks) butter
- 1/2 cup sugar
- 2 1/4 cups flour
- 3 oz semi-sweet chocolate, grated
- 1 tbsp milk
- 9 oz mascarpone cheese
- 1 cup mixed berries
- None None Unsweetened cocoa powder, for dusting
- Preheat the oven to 400u0b0F. Line a baking pan with parchment paper.
- Beat butter and sugar in a large bowl with an electric mixer until light and fluffy. Add flour, chocolate and milk. Mix to form a firm dough.
- Roll out dough on a lightly floured surface to 1/4 inch thickness. Cut out 12 rounds with a 3 1/2 inch cookie cutter. Place on prepared pan.
- Bake for 8-10 mins, until crisp and golden. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.
- For each shortcake stack, spread mascarpone on 1 shortcake. Top with berries and a second shortcake. Dust with cocoa powder.
