Thai Beef Skewers With Sweet Potato Dip
- 1 lb beef rump steak, trimmed, cut into 1/2 inch pieces
- 2 tbsp olive oil
- 2 tbsp Thai seasoning paste
- 1 1/4 lbs sweet potatoes, peeled, cut into 1/2 inch pieces
- 1/2 cup sour cream
- 2 tbsp finely chopped flat-leaf parsley
- None None Mixed salad, to serve
- Combine beef, oil and seasoning paste in a shallow glass or ceramic dish. Thread beef onto 8 skewers.
- Grill skewers on a hot grill for 3-5 minutes for medium or until cooked to your liking. Transfer to a heatproof plate. Cover with foil and rest for 5 minutes.
- Meanwhile, place sweet potatoes in a microwave- safe bowl. Add 2 tablespoons water. Cover with plastic wrap. Microwave on high for 3 minutes or until tender when pierced with a skewer. Let stand for 5 minutes. Drain. Add sour cream and half the parsley and mash until almost smooth. Season with salt and pepper.
- Serve beef skewers with sweet potato dip and salad, and sprinkled with remaining parsley.
