Caramelized Leek And Brie Tartlets

  1. Preheat the oven to 200u0b0F. Grease two 12-cup mini muffin pans.
  2. Heat oil and butter in a large skillet on medium heat. Cook leek, stirring, about 5 mins or until leek softens. Add garlic, sugar and vinegar; cook, stirring, about 8 mins or until leek caramelizes.
  3. Cut eight squares from each pastry sheet. Press one pastry square into each muffin cup. Spoon leek mixture into crusts.
  4. Cut cheese into 24 pieces. Place a piece of cheese in each tartlet.
  5. Bake about 20 mins. Serve tartlets topped with thyme.
