Caramelized Leek And Brie Tartlets
- 1 tbsp olive oil
- 2 tbsp butter
- 2 None leeks, thinly sliced
- 1 clove garlic, crushed
- 1 tbsp light brown sugar
- 1 tbsp white wine vinegar
- 3 sheets frozen puff pastry, thawed
- 8 oz brie cheese
- 24 sprigs sprigs lemon thyme
- Preheat the oven to 200u0b0F. Grease two 12-cup mini muffin pans.
- Heat oil and butter in a large skillet on medium heat. Cook leek, stirring, about 5 mins or until leek softens. Add garlic, sugar and vinegar; cook, stirring, about 8 mins or until leek caramelizes.
- Cut eight squares from each pastry sheet. Press one pastry square into each muffin cup. Spoon leek mixture into crusts.
- Cut cheese into 24 pieces. Place a piece of cheese in each tartlet.
- Bake about 20 mins. Serve tartlets topped with thyme.
