Summer Pavlova
- 4 None egg whites
- 1 cup sugar
- 1 tsp lemon juice
- 1/2 tsp vanilla extract
- 1 1/4 cups heavy cream, whipped
- 4 None peaches or nectarines, pitted and sliced
- 1 None passion fruit, pulp scooped out
- Preheat the oven to 300u0b0F. Line a baking pan with parchment paper.
- Beat egg whites in a clean, dry bowl with an electric mixer until soft peaks form. Gradually add sugar, 1 tbsp at a time, beating until sugar has dissolved and foam is stiff, thick and glassy. Beat in lemon juice and vanilla.
- Spread onto prepared pan to form a 10-inch round.
- Bake for 20 mins. Reduce oven temperature to 250u0b0F. Bake for 55-60 mins. Cool in turned-off oven, with the door ajar, to dry out completely. Spread with whipped cream and decorate with peaches and passion fruit pulp.
