Easter Animal Cookies
- 2 1/2 cups all-purpose flour
- 1 tsp vanilla extract
- 2 None eggs, 1 separated
- 2 1/4 cups powdered sugar
- 3/4 cup butter, diced
- 1 tsp half and half
- 3 tbsp lemon juice
- None None Red, yellow and blue food coloring
- None None Multicoloured sprinkles, to decorate
- In a bowl, mix the flour, vanilla extract, whole egg, 2/3 cup powdered sugar, and a pinch of salt. Add the butter and knead to a smooth dough. Wrap in aluminum foil and chill for 30 mins.
- Preheat the oven to 325u0b0F. Line 3 baking sheets with parchment paper. On a lightly floured surface, roll out to 1/8 of an inch thick. Cut out 30 assorted, rabbits, lambs, ducks and butterflies, re-rolling the dough as necessary. Lay on the baking sheets.
- Mix the egg yolk and half and half and brush over the cookies. Bake one sheet at a time for 10-14 mins each, until golden brown. Allow to cool.
- Mix the egg white, lemon juice and remaining powdered sugar to a smooth, thick icing. Divide evenly into 4 bowls. Leave 1 bowl white and color the others red, yellow and blue. Remove 1 tbsp of each icing and place in small freezer bags. Cut off a small corner of each.
- Frost the cookies with the different icings. Allow to dry, then decorate with the bagged icings and colored sprinkles.
