Clams Steamed With Corn, Cider And Soy
- 2 tbsp butter
- 1/2 cup chopped onion
- 4 oz chorizo, cut into small dice
- 1 cup fresh, frozen or canned corn kernels
- 2 1/2 lbs clams, rinsed under cold water
- 1/2 cup apple cider
- 1/2 cup heavy cream
- 2 tbsp soy sauce
- 2 None green onions, thinly sliced
- None None Toasted ciabatta, to serve (optional)
- Melt butter in a large pot on medium heat. Add onion and chorizo for 5 mins, stirring. Stir in the corn kernels. Remove from heat.
- Place the cleaned clams in another large pot. Add the cider and bring to a boil. Cover and steam for 4-5 mins or until clams just open (discard any that don't open). Drain clams in a colander and reserve the cooking liquid. Strain liquid through a fine sieve.
- Place the onion mixture on medium heat. Cook for 2 mins. Add the cream, soy sauce and cooking liquid. Cook until reduced by half. Season with salt and pepper to taste. Add the clams and mix well.
- Ladle into dishes. Garnish with green onions. Serve with toasted ciabatta, if desired.
