Strawberry Cheesecake
- 1 cup all-purpose flour
- 1/2 cup self-rising flour
- 7 tbsp butter, chopped
- 1/4 cup granulated sugar
- 1 tbsp ground almonds

- 1 1/2 lb cream cheese
- 1/2 cup granulated sugar
- 4 None large eggs
- 2/3 cup heavy cream
- 1/4 cup all-purpose flour
- 9 oz strawberries, hulled, chopped, plus extra sliced to decorate
- None None ice cream, to serve
- To make the tart base, sift flour into a large bowl. Cut in butter until mixture resembles breadcrumbs. Stir in sugar and almonds. Gradually mix in enough water to form a pliable dough (about 1/4 cup) then wrap in plastic wrap and chill for 30 mins.
- Preheat oven to 350u0b0F. Lightly grease an 8 inch springform pan. Roll out pastry dough then use to line pan, trimming edges. Chill for 10 mins. Prick base with a fork then line with parchment paper and fill with baking beans. Blind bake for 10 mins. Remove paper and beans and let cool.
- To make the filling, beat cream cheese and sugar together until creamy. Add eggs, 1 at a time, beating well after each addition. Stir in cream and flour until smooth then fold in chopped strawberries. Transfer to prepared tart shell and bake for 50-55 mins, until set. Let cool completely.
- Decorate with sliced strawberries and serve with ice cream.
