Rice Pilaf With Spiced Beef

  1. Heat 1 tbsp ghee in a large frying pan. Sweat onion, garlic and spices until onion is soft. Add rice and stir to coat. Add stock, bring to a boil then reduce heat and simmer, covered, for 12 mins. Let cool, covered, for 5 mins, or until rice is tender. Add currants.
  2. Meanwhile, heat remaining ghee in a large frying pan. Add ground beef and cook, stirring, until meat is browned. Add curry powder and cook until fragrant. Add sweet chili sauce, 1/4 cup water, spring onions and peas. Cook, stirring, until peas are soft and heated through.
  3. Serve rice pilaf topped with spiced beef and cilantro sprinkled over top.
