Rice Pilaf With Spiced Beef
- 2 tbsp ghee or peanut oil
- 1 None small onion, finely sliced
- 1 clove garlic, minced
- 1 tsp cumin seeds
- 1 tsp caraway seeds
- 2 pinches ground turmeric
- 7 oz basmati rice
- 2 cups chicken stock
- 2 tbsp currants
- 1 lb ground beef
- 1/2 tsp curry powder
- 1/3 cup sweet chili sauce
- 4 None spring onions, thinly sliced
- 3 oz frozen peas
- 1/2 cup fresh cilantro leaves
- Heat 1 tbsp ghee in a large frying pan. Sweat onion, garlic and spices until onion is soft. Add rice and stir to coat. Add stock, bring to a boil then reduce heat and simmer, covered, for 12 mins. Let cool, covered, for 5 mins, or until rice is tender. Add currants.
- Meanwhile, heat remaining ghee in a large frying pan. Add ground beef and cook, stirring, until meat is browned. Add curry powder and cook until fragrant. Add sweet chili sauce, 1/4 cup water, spring onions and peas. Cook, stirring, until peas are soft and heated through.
- Serve rice pilaf topped with spiced beef and cilantro sprinkled over top.
