Fruit And Wine Jello
- 12 None gelatin sheets
- 1 cup sweet white wine
- 3/4 cup + 2 tsp granulated sugar
- 1 cup sparkling wine or Champagne
- 7 oz blueberries
- 7 oz blackberries
- 1/2 None cantaloupe melon, seeds removed and flesh scooped into small balls
- 7 oz raspberries
- 2/3 cup heavy whipping cream
- None None fresh mint sprigs, to decorate
- Soak the gelatin in a shallow bowl of cold water for 10 mins. Gently heat the sweet white wine and 3/4 cup sugar in a pan, stirring until the sugar has dissolved. Remove the pan from the heat. Remove the gelatin from the water, squeeze out the excess liquid, and add to the warm wine-sugar. Stir until the gelatin has completely dissolved, then stir in the sparkling wine or Champagne.
- Divide all the fruit between 8 small heatproof glasses and pour over the warm wine mixture. Leave until cooled, then transfer the glasses to the fridge and chill for 2-3 hrs until set.
- Whip the cream with 2 tsp of sugar to soft peaks. Drop spoonfuls on top of each glass of jello and decorate with mint sprigs.
