Pork And Cilantro Noodles
- 2 tbsp vegetable or peanut oil
- 2 1/4 lb ground pork
- 2 tbsp finely grated fresh ginger
- 3 cloves garlic, minced
- 1 None large red pepper, deseeded, sliced
- 4 None baby bok choy, thickly shredded
- 2 tsp sesame oil
- 1/2 cup teriyaki marinade
- 1 lb fresh Hokkien noodles
- 1 cup fresh cilantro, leaves chopped
- Heat 1 tbsp oil in a wok or large frying pan over medium heat. Add ground pork and cook, stirring to break up lumps, for 7-8 mins, until browned. Add ginger and garlic. Stir-fry for 30 seconds, or until fragrant. Transfer to a large heatproof bowl. Wipe pan clean.
- Add remaining oil to pan and stir-fry pepper for 2 mins, until softened. Add bok choy and pork mixture. Toss to combine. Add sesame oil and marinade. Stir-fry for 2 mins, or until heated.
- Meanwhile, soak noodles in boiling water for 5 mins then stir to separate strands. Drain. Add to pork mixture and toss to combine. Sprinkle with fresh cilantro.
