Sweet Chili And Sesame Beef Skewers
- 14 oz rump steak, cut into 1/2 inch pieces
- 1/4 cup soy sauce
- 2 tsp sesame oil
- 16 None cherry tomatoes
- 1 None green pepper, deseeded, chopped
- 2 tbsp vegetable or peanut oil
- 2 cups snap peas, halved diagonally
- 2 None carrots, peeled, cut into matchsticks
- 2 None green onions, thinly sliced diagonally
- 1 cup bean sprouts
- 1 tbsp white vinegar
- 1 tbsp sesame seeds, toasted
- 1 tbsp sweet chili sauce
- Combine beef, 2 tbsp soy sauce and half the sesame oil in a bowl. Refrigerate for 10 mins to marinate. Thread beef, tomatoes and pepper on to 8 skewers. Heat half the vegetable oil in a large frying pan. Cook and turn skewers for 5 mins, or until browned and cooked. Transfer to a heatproof plate. Cover with foil and rest for 5 mins.
- Place snow peas in a heatproof bowl. Cover with boiling water. Set aside for 2 minutes or until tender and drain. Refresh under cold water and drain. Transfer to a large bowl. Add carrot, onion and sprouts.
- Combine the remaining soy sauce, sesame oil and vegetable oil with the vinegar and half the sesame seeds. Pour two-thirds of the dressing over salad and toss to combine. Combine remaining soy dressing with sweet chili sauce and remaining sesame seeds. Place 2 skewers on each serving plate. Drizzle with sweet chili mixture. Serve with salad.
