Apple And Pear Cupcakes With Passionfruit Icing

  1. Preheat oven to 350u0b0F. Line a 12-hole cupcake pan with paper cases.
  2. Using an electric beater, cream butter and sugar together until light and fluffy. Beat in vanilla.
  3. Add eggs one at a time, beating well after each addition. Fold in flour alternately with milk, beginning and ending with flour. Fold in fruit. Spoon mixture into paper cases until two-thirds full.
  4. Bake for 20-25 mins, until a skewer comes out clean. Cool in pan for 5 mins. Transfer to a wire rack to cool completely.
  5. To make icing: In a medium heatproof bowl, combine powdered sugar, passionfruit pulp and butter. Place over a saucepan of simmering water. Stir until combined and the mix is a spreadable consistency.
  6. Spread icing over cooled cakes. Top with sugar balls.
