Apple And Pear Cupcakes With Passionfruit Icing
- 1/2 cup butter, chopped, at room temperature
- 3/4 cup sugar
- 1 tsp vanilla extract
- 2 None large eggs
- 2 1/2 cup self-rising flour, sifted
- 2/3 cup milk
- 1 None green apple, peeled, cored, chopped
- 1 None pear, peeled, cored, chopped
- None None FOR THE ICING
- 1/2 cup powdered sugar
- 2 tbsp passionfruit pulp
- 1 tbsp butter
- None None Silver sugar balls, to decorate
- Preheat oven to 350u0b0F. Line a 12-hole cupcake pan with paper cases.
- Using an electric beater, cream butter and sugar together until light and fluffy. Beat in vanilla.
- Add eggs one at a time, beating well after each addition. Fold in flour alternately with milk, beginning and ending with flour. Fold in fruit. Spoon mixture into paper cases until two-thirds full.
- Bake for 20-25 mins, until a skewer comes out clean. Cool in pan for 5 mins. Transfer to a wire rack to cool completely.
- To make icing: In a medium heatproof bowl, combine powdered sugar, passionfruit pulp and butter. Place over a saucepan of simmering water. Stir until combined and the mix is a spreadable consistency.
- Spread icing over cooled cakes. Top with sugar balls.
