Honey-Glazed Chicken Drumsticks With Rice Salad And Salsa (Lactose-Free)
- 18 None chicken drumsticks
- 2 tbsp runny honey
- 1 1/2 tsp chilli powder
- 5 tbsp olive oil
- 200 g long-grain rice
- 9 None tomatoes, 6 deseeded and diced, 3 cored and cut into 8 chunks
- 1 None green pepper, deseeded and cut into rings
- 1 None red chilli, deseeded and finely chopped
- 2 None onions, peeled and finely diced
- 1 None lime, grated zest and juice
- 2 None cloves garlic, peeled and crushed
- None None Pinch of caster sugar
- 250 g lactose-free yogurt
- 425 g can pineapple chunks, drained, juice reserved
- 15 g fresh coriander, leaves cut into strips
- 100 g frozen peas, thawed
- Preheat the oven to 400u0b0F. Grease a roasting pan. Season the drumsticks with salt and arrange in the roasting pan. Roast for 25 mins, or until the juices run clear. Mix the honey, 1/2 tsp cayenne and 1 tbsp oil. Brush over the drumsticks then return to the oven and cook for another 5 mins.
- Meanwhile, cook the rice in boiling salted water according to the package instructions. Drain, rinse under cold water and allow to cool.
- For the salsa, mix the diced tomatoes, pepper, chili, onions, lime zest, garlic and 4 tbsp oil. Season, add a pinch of sugar and a few drops of lime juice.
- In a serving bowl, mix the rice, tomato chunks, pineapple and peas. Mix the yogurt, 2 tbsp pineapple juice and 1 tsp cayenne. Season and add a few drops of lime juice. Add the coriander then toss with the rice mixture and season. Remove the drumsticks from the oven and serve with the rice salad and salsa.
